Strawberry Spinach Salad
Pairs well with SIMI Rosé
SALAD INGREDIENTS
1 bag baby spinach
2 cups fresh strawberries, sliced
½ cup toasted pecans
4 oz crumbled goat cheese
RASPBERRY VINAIGRETTE INGREDIENTS
1 cup fresh raspberries
½ cup extra virgin olive oil
½ cup red wine vinegar
½ lemon, squeezed
2 Tbsp honey
½ teaspoon Dijon mustard
¼ salt and pepper
DIRECTIONS
Combine all salad ingredients in a blender or food processor and blend until smooth.
After rinsing and drying, combine baby spinach and strawberries in a large bowl. Toss in the toasted pecans and slowly add small amounts of the raspberry vinaigrette to desired coating. Add crumbled goat cheese to the top. Adjust taste by sprinkling salt and pepper.
