Herb-Rubbed Prime Rib
Pairs well with SIMI Cabernet Sauvignon
• 2 Tbsp olive oil
• 4 cloves garlic, minced
• 1 Tbsp fresh rosemary, chopped
• 1 Tbsp fresh thyme
• 1 Tbsp ground black pepper
• 1 Tbsp kosher salt
• 2 lbs boneless prime rib roast
Preheat oven to 400°F. In a bowl, combine olive oil, garlic, rosemary, thyme, black pepper, and salt. Pat prime rib roast dry; rub with herb mixture.
Place on a rack in a roasting pan. Roast on center rack of oven for 15 minutes. Turn temperature down to 350°F. Continue roasting for about 40 minutes (until thermometer reads 130°F).
Remove roast from oven. Do not cover. Let rest for 15 minutes before slicing.
IMPORTANT: Remove prime rib from refrigerator 1 hour before cooking.
